The De Carlo are the heirs of a family tradition dating back to the 17th century (1668). Today, Saverio and Grazia De Carlo along with their children, still passionately produce their prized and exceptional oil from their centuries old olive trees in their establishment in the famous Conca Barese in Bitritto. They have incorporated modern technology with their old world tradition. Olives are hand picked and pressed with 24 hours of the harvest with a granite stone olive mill and the triple phase continuous cycle press.
