Established in Rubbiara in 1862, Acetia Pedroni produces the Giuseppe II traditional balsamic vinegar according to the traditional methods of its founder, Giuseppe I. Aged in oak and chestnut barrels, its smooth flavour comes from a 25-year aging process.

It can add a special accent to any dish, from a simple risotto to beef carpaccio and is the perfect match for Parmigiano Reggiano cheese. A rare and delicate balsamic vinegar.

• Strawberries with Balsamico Tradizionale
  
  Wash and slice strawberries in halves or quarters depending on their size (if using small wild strawberries, leave them whole). Place in a mixing bowl and add two to three teaspoons of a Traditional Balsamic like Pedroni's extra vecchio "Giuseppe II" (the quanity of balsamic depends on the volume of strawberries). Let set for about 15 minutes than add sugar to taste stirring gently and coating the berries. Serve with a good quality vanilla icecream and enjoy!
